Independence Day

Today my girls and I are celebrating the last major holiday for a while that my husband will be away. We’re in the home stretch of a long year of independence. By Labor Day we’ll be a family of four again. Hooray!

We’re joining friends for a pool party this afternoon, and I’m taking mini cheesecakes, following this ridiculously easy recipe. I’ve been meaning to make these for the 4th of July for years, and have never managed to do it. This was so quick that I might even finish a last-minute red white & blue dress for K, too.
Start with this: 
Add this:
Bake:
Add fruit yum, red and blue, of course:
Take to party.
Hope you’re celebrating with the ones you love.
